Working Principle
The plate pasteurizer uses a multi-layer stainless steel plate heat exchanger where heat is transferred between hot and cold fluids to achieve heating and cooling. A typical pasteurization process for milk includes the following stages:
1. Preheating – The incoming milk is preheated by the hot outgoing milk.
2. Heating – Milk is heated to 72–85°C by hot water or steam.
3. Holding – The product is held for 15–30 seconds to destroy harmful microorganisms.
4. Cooling – The milk is cooled first in the regeneration section, then with cold or chilled water to 4–5°C for filling or storage.
